I did a Google search a few months ago for crock pot mashed potatoes and came across the best recipe ever! The recipe even says "life changing" and that is no lie! I found the recipe HERE. I can't even explain how AWESOME they are, you just have to try them for yourself. Here's what to do:
Wash 5lbs of potatoes, slice them into pieces and put them in a large crock pot. "Standard size" crock pots are too small, however I did make these in a standard sized crock pot once, the lid didn't fit so I just put tin foil over the top and they turned out the same. (Just an FYI, I would suggest cutting them into smaller pieces than I did in the picture, the skins can be a little large when finished.)
Measure 1 1/3 cup milk and warm in the microwave for 1 minute. Pour milk and 1 cup of water into crockpot. Cut 1 lb. of butter in pieces and put on top of potatoes. Sprinkle 1 tablespoon salt and 3/4 teaspoon pepper over it all.
Cook on high for 4 hours in the crockpot. The key to any good crockpotting is no peeking! Don't open until 4 hours is up. When the time is up, do not drain the excess water from the potatoes. Using a hand mixer blend the potatoes until smooth. You can add more milk to get to your preferred consistency.
Keep the crockpot on a low or warm setting until you serve them. You can freeze these too! I freeze them in individual containers. I put them in the fridge the night before I want to eat them and heat them in the microwave. If you're in a rush you can thaw them and warm them in the microwave. These are great to have on hand all the time so you don't have to worry about side dishes.
