My Favorite Chicken Salad



I bought a chicken salad sandwich at a deli in a grocery store when I lived in Texas.  It was the best chicken salad sandwich I had ever eaten.  I always wanted to try to make them at home but not until recently did I figure out how.  So, without further hesitation, here it is:

Chop 2 cups of chicken.  I like to cook a chicken in the crock-pot for supper and then use the left overs to make this recipe.  You can use canned chicken too, but obviously it's not as good. :)  Chop 2 stalks of celery, 8 red grapes, and 20 whole salted almonds.  I know I could have figured this out in cups, but I literally counted the amount I put in the mix and this was perfect!


Mix all the ingredients together with 1/3 cup mayonnaise and a dash of salt and pepper.  Add more mayo if you like it creamier.


I would have preferred to serve it on a croissant with lettuce, but I didn't have either of those.  So, whole wheat bread was it.  I served it with my favorite BBQ chips.  The crunch of the celery and nuts is awesome and the grapes give a little sweetness to the mix.
