Freezer Burritos



I love making freezer meals especially in the fall and winter.  I spend one whole day cooking and I can usually get enough made for a week or two.  One of the best meals to freeze is breakfast because if you're like me, most mornings are rushed and sometimes breakfast gets skipped.  Having something in the freezer to throw in the oven before you jump in the shower is perfect!  Today I made breakfast burritos.  YUM!  Here's how I make 'em:

Brown up 1 lb of sausage, I prefer to use turkey sausage but you can use your favorite.


While your sausage is frying, drain a can of black beans and rinse them with cold water.



Drain the sausage and set aside.  Whisk up 10 eggs and about 1/4 cup of milk.  The milk helps make them fluffier.  I use skim milk, but for the fluffiest eggs, use cream or half & half.


In a large bowl mix your scrambled eggs, sausage, black beans, one jar of salsa, and one bag of shredded cheese.  I've made burritos before completely from scratch cutting up onions and peppers, but I have found that using salsa is much easier and tastier.  (Sorry I forgot to take a picture of this step.)

Pile the mixture onto a tortilla, I used about 3/4 cup per burrito and got 16.    Fold in the sides and then roll up from the bottom.  It's important to fold in the sides or all the good stuff falls out.  Wrap them up in tin foil and put in a freezer bag or container.


I put some of them in the fridge to eat over the next couple days and the rest in the freezer.  When you're ready to reheat them you can put them in the fridge the night before to thaw, then place in the oven at 350 for 5-7 minutes.  You can put them in the oven frozen too, but set the oven to 450 and put them in for 10-12 minutes.

1lb. Sausage
10 Eggs
1/4 cup of milk
1 can of black beans
1 bag of cheese
1 jar of salsa
1 pkg tortillas (12-18)

Brown sausage and drain, set aside.  Drain and rinse black beans, set aside. Whisk eggs and milk and fry in a skillet. Mix sausage, eggs, black beans, cheese, and salsa in a large bowl.  Put about 3/4 cup of mixture in tortilla and roll up.  Wrap in tin foil and place in freezer bag or container.  Thaw in fridge the night before reheating, place in oven at 350 for 5-7 minutes.  OR from frozen, place in oven at 450 for 10-12 minutes.
